Tomato and cheese quiche

  • 300 g flour, plain
  • 150 g butter
  • 90 g eggs
  • 24 small vine tomatoes
  • 100 g Woerle processed cheese
    (4 triangles “Fine & Light” each 25 g)
  • 150 ml whipped cream
  • 3 tbsp sour cream
  • fresh basil leaves
  • salt, pepper

Step 1

Finely crumb the flour, salt, and cubes of cold butter using your hands. Add eggs and quickly knead into a smooth dough, roll out, and allow to rest briefly in the refrigerator.

Step 2

Place the dough in the quiche tins and prick several times with the fork, return it to the refrigerator for 5 minutes. Preheat the oven to 180 degrees (two-sided heat) and prebake the dough bases for 7 minutes.

Step 3

Distribute the tomatoes and the processed cheese cut in small pieces over the tins. For the filling mix the whipped cream with the eggs and sour cream, season with salt and pepper. Pour into the quiche tins and bake at 180 degrees for another 30 minutes. Garnish with fresh basil leaves and serve
