Sweet potatoes and minced meat gratin
Finely chop the onion and sauté in the olive oil. Add the minced meat and roast until golden brown. Dilute the tomato paste in a little broth or water and mix together with the parsley. Season with salt and pepper.
Peel the sweet potatoes and cut them into thin slices. For the icing melt butter in a small pan, mix in the flour, and sweat briefly. Gradually stir in the milk and vegetable stock, keep mixing with the whisk. Bring the sauce to a boil, and continue stirring until it thickens a little. Stir in the pieces of processed cheese and allow them to melt, season with salt, pepper, and nutmeg.
Fill a suitable baking pan with some of the sauce, distribute the minced meet and sweet potatoes uniformly. Pour the remaining sauce and bake at 180 degrees for approx. 45-50 minute.
