WOERLE Emmental cheese mild, 45% FDM, is made from valuable hay milk from selected Salzburg dairy farmers.

Austria’s most popular Emmental cheese is a treat for the connoisseur with its mild nutty taste and outstanding quality. In accordance with old cheese-making traditions, it is made using fresh hay milk following a special recipe and lovingly cared for during the three-month maturing period. This ensures that it tastes as Austria likes it.

Beautiful varietal character with notes of pineapple, citrus fruits, marzipan and meadow flowers. It is also a joy on the palate with hazelnut, buttermilk, white bread and cocoa flavours. Another typical feature is the compact, crumbly texture.

Mondseer

The delicate and spicy Mondseer is probably the oldest and most traditional soft cheese in Austria. Its origins date back to 1830.
Even today, the cheese is still made according to a traditional and carefully honed recipe of the Mondsee Monastery and cultivated with red cultures several times a week.

The fresh hay milk produced every day, so important for its aromatic taste, comes from cows grazing on the lush and herb-rich meadows of Mondseeland. Finely acidic scent of buttermilk accompanied by meadow flowers and hazelnut. Savoury and spicy on the palate. There are also, however, milky aromas and subtle notes of green young wood and moss – perfectly integrated in the soft, smooth texture.

The gentle aroma of cream, citrus fruits, vanilla and almonds conveys a sense of both freshness and warmth. In every piece of Heumond Kas you can taste the care with which it was made and its origins in nature. It is a natural cheese made from the best, silo-free and pasteurised hay milk in the region. It has a milky colour in winter and yellow in summer. The natural production process and manual treatment during the three-week maturing period give Heumond Kas its inimitably delicious taste.

With buttermilk, yoghurt and citrus notes, it has a very refreshing aroma. This can also be sensed on the palate, with butter and yoghurt as well as hints of hazelnut. This vital characteristic is supported by the smooth and elastic texture.
